Bahrain: Muhammar - Sweet Rice Dish

Bahrain: Muhammar - Sweet Rice Dish
A wonderful rice, slightly sweet, but meant to be eaten with the savory part of the meal. Lots of cardamon, spices, and rose water. A very unusual taste, very delicate and sophisticated.

Azerbaijan: Toyug chigirtmasi

Azerbaijan: Toyug chigirtmasi - Chicken with eggs

This dish is like  a frittata with chicken. Vewry yummy and tastes pretty "normal" (compared to our other culinary adventures).

Toyug chigirtmasi served with rice, collard greens and ginger ale.

Azerbaijan is to the east of Armenia; which is to the east of Turkey. To the east of Azerbaijan is the Caspian sea.
There are some areas between Azerbaijan and Armenia that are claimed by both countries.

Australia: Lemurs! No, LAMINGTONS

Today was Australia! We had these wonderful little cakes dipped in chocolate and coconut... Yummy!

First you gotta make the sponge cake. Then... you make the lemurs. No! I mean, the lamingtons.

Happy cook

Do you have suggestions for recipes?

Friends,

If you have suggestions for recipes, you can enter them in your comments. That would be of great help.

Thanks!!

Armenia: Haigagan Anousheghen

Today we reach Armenia, and we made their royal pudding, known as  Haigagan Anousheghen. Try to say this aloud, if you dare!

Lots and lots of nuts, of four types. And a strawberry meringue on top.

Taste: yummy!
Consistency: hummmmm...... we are not sure it was supposed to be a soup :))

Empanadas! This recipe deserves an exclamation mark. Savory pastries filled with meat and green olives.

Antigua and Barbuda: Ital Style Pumpkin Soup

Today we cooked Ital Style Pumpkin Soup.

Ital food is organic, non-processed food from the earth (that is, vegetarian, by most definitions). “Ital is vital” best summarizes the Rastafarian belief that pure food from the earth is the most physically and spiritually beneficial. We used one of the pumpkins grown in our local farm, so we followed the Ital spirit.
And it was yummy!

Historians in both Antigua and Barbuda and Barbados have no real solution to the origin of the names of these islands. But it is pretty weird because in Portuguese, Barbuda means "bearded woman" ?!??!?!?

Angola: Calulu de Peixe with Funje

Hi there, it is great to know we have some blog followers!
And plenty of hungry folks to feed...

Angola is a Portuguese-speaking country in the West Coast of Africa, that is why we know that "de Peixe" means "of fish".  We used Ono from Costco which was pretty good.

Calulu de Peixe:  It was really flavorful, with all the veggies, eggplant, okra, tomatoes mixed in. Very tasty. The hard thing was to acquire the Palm Oil. Here is a hint: if you need it, do not go to Whole Foods or Vitamin Cottage, instead go to the Indian Grocery on 28th St in Boulder. Bring your $20 (gasp) to acquire it. Whole Foods says they do not sell it because it is not sustainably harvested, we need to research that...

Funje: a porridge. It is just flour and water. We used corn meal, who knows if it was the really right one... We were not so fond of this one... Holly pushed it aside with the fork... Alici said it stuck to the roof of her mouth like peanut butter... Ligia dutifully ate it... And Jim said it takes an African person to make it right.

Funje is the porridge at 1 PM. Fish is at 8 PM. Veggies and broth all around, yummy!

Andorra: Escudella

Today we made Escudella from Andorra. From where, you might ask?!?!? Andorra! A tiny tiny country in the mountains between Spain and France.
Recipe from MyHungryTum.com
It is a yummy hearty dish with two types of bean (white and garbanzo) and lots of meat (chicken and pork). Very filling!

Algeria: Steamed Chicken

Algerian Steamed Chicken: OMG, this was GOOOOOOOD!!!
Recipe from Chef Zadi
Instructions were somewhat unusual: steam in the chicken (rubbed in spices) over water and veggies.
We thought we'd try parsnips instead of turnips next time, as some of us are not huge fans of turnips.

Albania - TAVE KOSI

January 2nd, 2011. Day two of the adventure: Tave Kosi from Albania.  A very rich leg-of-lamb stew, which bakes in a yogurt sauce. When it is done, the thick sauce hardens similarly to a souffle. Yummy. We ate it with a greens-and-beet salad and bread.

The recipe is from gourmed.com

This is the Tave Kosi after we fluffed the "souflee" topping.

Wondering where Albania is?

Albania is a relatively small country NW of Greece, on the Adriatic See coast. If one were to swim west long enough, one would get to Italy.

Afghanistan - Cont.

Here is the link to the recipe we used:
http://www.afghan-web.com/culture/cooking/rote.html

The Rote is very good but in high altitude should be cooked for a couple of minutes longer than at sea level or similar altitudes.

Appetizer

Today is 01/01/2012 and we are starting our journey around the world.  The Edwards-Bernardet family decided to cook a typical dish from every single country in the world during 2012. We'll go in alphabetical order. Wish us good luck as we embark on this journey!
