Andorra: Escudella

Today we made Escudella from Andorra. From where, you might ask?!?!? Andorra! A tiny tiny country in the mountains between Spain and France.

It is a yummy hearty dish with two types of bean (white and garbanzo) and lots of meat (chicken and pork). Very filling!

    I might have some ideas when you get around to Portugal. First suggestion would be Alentejana. (Google it.) Of course, Ligia may have it all over me in this department.
