Antigua and Barbuda: Ital Style Pumpkin Soup

Today we cooked Ital Style Pumpkin Soup.

Ital food is organic, non-processed food from the earth (that is, vegetarian, by most definitions). “Ital is vital” best summarizes the Rastafarian belief that pure food from the earth is the most physically and spiritually beneficial. We used one of the pumpkins grown in our local farm, so we followed the Ital spirit.
And it was yummy!

Historians in both Antigua and Barbuda and Barbados have no real solution to the origin of the names of these islands. But it is pretty weird because in Portuguese, Barbuda means "bearded woman" ?!??!?!?
